I think I&#8217;ve been standing in front of the oven too long and I have gone BERRY nuts!<\/p>\n<p><a href=\"http:\/\/cookiescupcakesandcardio.co\/wp-content\/uploads\/2011\/08\/DSC03914.jpg\"><img loading=\"lazy\" class=\"aligncenter size-medium wp-image-1909\" title=\"Blueberry Lemon Pastry Bars\" src=\"http:\/\/cookiescupcakesandcardio.co\/wp-content\/uploads\/2011\/08\/DSC03914-300x263.jpg\" alt=\"\" width=\"300\" height=\"263\" srcset=\"https:\/\/cookiescupcakesandcardio.co\/wp-content\/uploads\/2011\/08\/DSC03914-300x263.jpg 300w, https:\/\/cookiescupcakesandcardio.co\/wp-content\/uploads\/2011\/08\/DSC03914.jpg 640w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>I found the hardest part of this recipe to be laying out the puff pastry and fighting with it to stay in a rectangle shape! \u00a0But, once you get it layed out, on the parchment paper, brush with melted butter, and spoon some blueberry puree on top the top of the bottom piece.<\/p>\n<p><a href=\"http:\/\/cookiescupcakesandcardio.co\/wp-content\/uploads\/2011\/08\/DSC03915.jpg\"><img loading=\"lazy\" class=\"aligncenter size-medium wp-image-1910\" title=\"Blueberry Lemon Pastry Bars\" src=\"http:\/\/cookiescupcakesandcardio.co\/wp-content\/uploads\/2011\/08\/DSC03915-300x227.jpg\" alt=\"\" width=\"300\" height=\"227\" srcset=\"https:\/\/cookiescupcakesandcardio.co\/wp-content\/uploads\/2011\/08\/DSC03915-300x227.jpg 300w, https:\/\/cookiescupcakesandcardio.co\/wp-content\/uploads\/2011\/08\/DSC03915.jpg 640w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>Next up is the messy part! \u00a0You have to somehow get the top of the pastry bar in place, without the puree leaking out, and then pinch the edges together! \u00a0Jeepers it was tough. \u00a0I was also convinced that I didnt have enough blueberry inside, so while I was laying, squeezing, pinching, I was also pouring another spoonful of puree inside! \u00a0Clearly, it made a mess.<\/p>\n<p><a href=\"http:\/\/cookiescupcakesandcardio.co\/wp-content\/uploads\/2011\/08\/DSC03917.jpg\"><img loading=\"lazy\" class=\"aligncenter size-medium wp-image-1911\" title=\"Blueberry Lemon Pastry Bars\" src=\"http:\/\/cookiescupcakesandcardio.co\/wp-content\/uploads\/2011\/08\/DSC03917-300x200.jpg\" alt=\"\" width=\"300\" height=\"200\" srcset=\"https:\/\/cookiescupcakesandcardio.co\/wp-content\/uploads\/2011\/08\/DSC03917-300x200.jpg 300w, https:\/\/cookiescupcakesandcardio.co\/wp-content\/uploads\/2011\/08\/DSC03917.jpg 640w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>The mess is slightly disguised once the bars are baked and in their puff pastry glory! \u00a0But what helps the most to disguise is the lemon cheesecake spread that goes on top! \u00a0Yum! \u00a0I had leftover fresh blueberries, so onto the top they went! \u00a0Despite the mess, they came out really well. \u00a0They got the seal of approval from my critics and I knew I was onto something tasty.<\/p>\n<p><a href=\"http:\/\/cookiescupcakesandcardio.co\/wp-content\/uploads\/2011\/08\/DSC03928.jpg\"><img loading=\"lazy\" class=\"aligncenter size-medium wp-image-1912\" title=\"Blueberry Lemon Pastry Bars\" src=\"http:\/\/cookiescupcakesandcardio.co\/wp-content\/uploads\/2011\/08\/DSC03928-300x209.jpg\" alt=\"\" width=\"300\" height=\"209\" srcset=\"https:\/\/cookiescupcakesandcardio.co\/wp-content\/uploads\/2011\/08\/DSC03928-300x209.jpg 300w, https:\/\/cookiescupcakesandcardio.co\/wp-content\/uploads\/2011\/08\/DSC03928.jpg 640w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<div><strong><span style=\"color: #d87093;\">Blueberry Lemon Puff Pastry Bar<\/span><\/strong><strong><span style=\"color: #d87093;\">s<\/span><\/strong><\/div>\n<div><em><a href=\"http:\/\/www.visionsofsugarplum.com\/2011\/07\/blueberry-lemon-cheesecake-breakfast.html\" target=\"_blank\">(from Sugar Plum Blueberry Lemon Cheesecake Breakfast Pastries)<\/a><\/em><\/div>\n<div>1 pint fresh blueberries<\/div>\n<div id=\"_mcePaste\">4 teaspoons cornstarch<\/div>\n<div id=\"_mcePaste\">1\/3 cup granulated sugar<\/div>\n<div id=\"_mcePaste\">2 sheets puff pastry, thawed<\/div>\n<div id=\"_mcePaste\">1 egg whisked with 2 teaspoons water<\/div>\n<div id=\"_mcePaste\">4 ounces (half a block) cream cheese, softened<\/div>\n<div id=\"_mcePaste\">1 1\/4 cups confectioners&#8217; sugar<\/div>\n<div id=\"_mcePaste\">1 teaspoon finely grated lemon zest + 1 tablespoon lemon juice<\/div>\n<div id=\"_mcePaste\">1\/2 teaspoon clear vanilla extract<\/div>\n<p>Heat oven to 450 degrees F. Coat 2 large cookie sheets with cooking spray.<\/p>\n<p>In a medium saucepan, over medium heat, stir together blueberries, cornstarch and granulated sugar until well combined; bring to a boil, stirring frequently. Continue to cook, stirring constantly, until blueberries are cooked down and thickened. Process blueberries in a food processor until smooth.<\/p>\n<p>Unfold one pastry sheet on a lightly floured surface. Roll the pastry sheet into a 14 x 12-inch rectangle. Cut into 16 squares. Place squares onto cookie sheets; brush with the egg. Place 2 teaspoons of blueberry mixture into the center of each dough square.<\/p>\n<p>Unfold additional pastry sheet on floured surface. Roll the pastry sheet into a 14 x 12-inch rectangle. Cut into 16 squares. Place the squares on top of blueberry-topped squares. Crimp and seal edges with a fork. Brush tops of pastry squares with remaining egg. Bake 10-12 minutes or until golden brown. Transfer pastries to wire racks to cool.<\/p>\n<p>To make the glaze, in a medium bowl, whisk together cream cheese, confectioners&#8217; sugar, lemon zest, lemon juice and vanilla until well combined.
