I&#8217;ve been on a bit of a hiatus lately, but I&#8217;m starting back up in July . . . oh, that saddle is going to be painful! \u00a0Good thing I&#8217;ve been riding my mountain bike around.<\/p>\n<p>Anyways, the point of me telling you this, is that for our last group instructor meeting, where we all get together (as we hardly see each other due to our various schedules) and talk about what&#8217;s going well, classes we might want to look at adding etc, I was asked to bring cupcakes. \u00a0BUT, do you think that a group of fitness instructors want to eat a huge sugary cupcake? \u00a0My guess, was no, they&#8217;re not like me (aka they are F.I.T. and I&#8217;m the round (literally) odd-ball), so I set out to find a &#8220;cupcake&#8221; that was:<\/p>\n<p>1. not a muffin (an easy disguise),<\/p>\n<p>2. low in sugar,<\/p>\n<p>3. low in fat, and<\/p>\n<p>4. that tasted like it was none of the above!<\/p>\n<p>(Side note, I&#8217;m making a new cupcake for <a href=\"http:\/\/jjscustomcakery.com\/\" target=\"_blank\">JJ&#8217;s<\/a> and I&#8217;m going to call it the <em>Fun Free<\/em> cupcake and it&#8217;s going to be Gluten Free and Dairy Free&#8230;bahahaha!)<\/p>\n<p>A carrot filled cupcake seemed like a good start, as I knew the vegetable thing had to be on my side! \u00a0So I searched my beloved Tastespotting (which I recently had gotten my photo rejected from AGAIN. \u00a0Lord, how do people do it!?!?!) and found just the recipe that I had been looking for! \u00a0It is from Tessa at \u00a0<a href=\"http:\/\/www.handletheheat.com\/\" target=\"_blank\">Handle the Heat<\/a>, and is called <a href=\"http:\/\/www.handletheheat.com\/2009\/08\/healthier-carrot-cupcakes.html\" target=\"_blank\">Healthier Carrot Cupcakes<\/a>! \u00a0This recipe uses whole wheat flour, a small amount of oil, and applesauce for binding!<\/p>\n<p><a href=\"http:\/\/cookiescupcakesandcardio.co\/wp-content\/uploads\/2011\/06\/DSC02992.jpg\"><img loading=\"lazy\" class=\"aligncenter size-medium wp-image-1729\" title=\"Healthier Carrot Cupcakes\" src=\"http:\/\/cookiescupcakesandcardio.co\/wp-content\/uploads\/2011\/06\/DSC02992-200x300.jpg\" alt=\"\" width=\"200\" height=\"300\" srcset=\"https:\/\/cookiescupcakesandcardio.co\/wp-content\/uploads\/2011\/06\/DSC02992-200x300.jpg 200w, https:\/\/cookiescupcakesandcardio.co\/wp-content\/uploads\/2011\/06\/DSC02992.jpg 428w\" sizes=\"(max-width: 200px) 100vw, 200px\" \/><\/a><\/p>\n<p>Here is what you do:<\/p>\n<div id=\"_mcePaste\"><span style=\"color: #d87093;\"><strong>Carrot Cupcakes with Lemony Cream Cheese Icing<\/strong><\/span><\/div>\n<div id=\"_mcePaste\"><em>Found at Handle the Heat <\/em><\/div>\n<div id=\"_mcePaste\"><strong>For the Cupcakes<\/strong><\/div>\n<div>\u2022\t3\/4 cup whole-wheat pastry flour or whole wheat flour<\/div>\n<div id=\"_mcePaste\">\u2022\t1\/2 cup all-purpose flour<\/div>\n<div id=\"_mcePaste\">\u2022\t1 teaspoon baking soda<\/div>\n<div id=\"_mcePaste\">\u2022\t1\/4 teaspoon salt<\/div>\n<div id=\"_mcePaste\">\u2022\t1\/2 teaspoon ground cinnamon<\/div>\n<div id=\"_mcePaste\">\u2022\t1\/4 teaspoon ground nutmeg<\/div>\n<div id=\"_mcePaste\">\u2022\t1\/4 cup canola oil<\/div>\n<div id=\"_mcePaste\">\u2022\t3\/4 cup firmly packed light brown sugar<\/div>\n<div id=\"_mcePaste\">\u2022\t2 large eggs<\/div>\n<div id=\"_mcePaste\">\u2022\t1\/2 cup natural applesauce<\/div>\n<div id=\"_mcePaste\">\u2022\t1\/2 teaspoon vanilla<\/div>\n<div id=\"_mcePaste\">\u2022\t1 1\/2 cups finely shredded carrots (about 2 medium carrots)<\/div>\n<div id=\"_mcePaste\">\u2022\t1\/4 cup plus 2 tablespoons finely chopped walnuts (I omitted this as I was unsure about allergies)<\/div>\n<div id=\"_mcePaste\">Preheat the oven to 350 degrees. Bake until a toothpick comes out clean, about 20 minutes. Transfer to a wire rack to cool completely.<\/div>\n<div><strong>Lemon Cream Cheese Icing<\/strong><\/div>\n<div>\n<div id=\"_mcePaste\">\u2022\t4 ounces 1\/3 fat cream cheese<\/div>\n<div id=\"_mcePaste\">\u2022\t3\/4 cup confectioners&#8217; sugar, sifted<\/div>\n<div id=\"_mcePaste\">\u2022\t1\/2 teaspoon finely grated lemon zest<\/div>\n<\/div>\n<div id=\"_mcePaste\">With an electric mixer, beat together the cream cheese, confectioners&#8217; sugar and lemon zest until smooth and creamy. Frost the cooled cupcakes and sprinkle with the remaining 2 tablespoons chopped walnuts.
