{"id":6017,"date":"2014-12-10T19:32:34","date_gmt":"2014-12-10T19:32:34","guid":{"rendered":"http:\/\/cookiescupcakesandcardio.com\/?p=6017"},"modified":"2014-12-12T19:35:40","modified_gmt":"2014-12-12T19:35:40","slug":"starbucks-peppermint-mocha-cupcakes","status":"publish","type":"post","link":"http:\/\/cookiescupcakesandcardio.co\/?p=6017","title":{"rendered":"Starbucks Peppermint Mocha Cupcakes"},"content":{"rendered":"<div>\u00a0As you probably know by now, I have a slight additction to Starbucks drinks.\u00a0 In the fall, I love me a PSL, and when the winter time hits, it&#8217;s either a Peppermint Mocha Light, or a Gingerbread Latte, half sweet, non-fat, no whip.\u00a0 Yep, I&#8217;m <em>that<\/em> girl.\u00a0 Slightly high maintenance, but since I&#8217;m paying $5 a drink, I feel I&#8217;m entitled to a bit of <em>choosiness<\/em>.\u00a0<\/div>\n<div>\u00a0<\/div>\n<div>Back in September, I made a Pumpkin Spice Latte drink into a cupcake (see it <a href=\"http:\/\/cookiescupcakesandcardio.co\/?p=5641\" target=\"_blank\">here<\/a>), and our viewers really seemed to enjoy that, and so many people requested that I do another cupcake.\u00a0 Since the peppermint mocha seemed to be popular, and a drink that I already enjoyed, I decided to make that!<\/div>\n<div>\u00a0<\/div>\n<div>The chocolate and peppermint combination in this treat is perfect for any holiday celebration you might be attending. \u00a0Bring cupcakes to a Christmas event can be a nice change from the normal assortment of cookies trays that are found in abundance around this time of year.\u00a0<\/div>\n<div>\u00a0<\/div>\n<div>The swirl affect of the icing looks super hard, but it&#8217;s actually really easy! \u00a0In simple terms, all I do to create that effect is to &#8220;stripe&#8221; the bag with gel paste prior to putting the white buttercream into the piping bag. \u00a0I have shown viewers how to do that before when I made a <a href=\"http:\/\/cookiescupcakesandcardio.co\/?p=5647\" target=\"_blank\">Skittles cupcake<\/a>, and I will also use it again in a video up loading this weekend! \u00a0<\/div>\n<div>\u00a0<\/div>\n<div>I hope you enjoy this tutorial, have a very Merry Christmas!<\/div>\n<p><iframe loading=\"lazy\" src=\"\/\/www.youtube.com\/embed\/Zf9AOhvmi3Y\" frameborder=\"0\" width=\"600\" height=\"338\"><\/iframe><\/p>\n<div><!--more--><\/div>\n<div>\u00a0<\/div>\n<div>\n<p id=\":1cs\"><strong><span style=\"font-size: medium;\">Starbucks Peppermint Mocha cupcakes<\/span><\/strong><\/p>\n<\/div>\n<div>Ingredients:<\/div>\n<div>\n<ul>\n<li>1 1\/3 cups all-purpose flour<\/li>\n<li>1\/3 cup unsweetened cocoa powder<\/li>\n<li>2\u00a0teaspoon\u00a0espresso powder<\/li>\n<li>1\u00a0teaspoon\u00a0baking powder<\/li>\n<li>1\/2 \u00a0teaspoon\u00a0baking soda<\/li>\n<li>1\/4 teaspoon\u00a0salt<\/li>\n<li>1\/2 cup milk<\/li>\n<li>1\/2 cup strong brewed coffee<\/li>\n<li>1 teaspoon pure peppermint extract<\/li>\n<li>1\/2 cup butter<\/li>\n<li>1\/2 cup granulated sugar<\/li>\n<li>1\/2 cup light brown sugar<\/li>\n<li>1 egg<\/li>\n<\/ul>\n<p><a href=\"http:\/\/cookiescupcakesandcardio.co\/wp-content\/uploads\/2014\/12\/DSC_0176site.jpg\"><img loading=\"lazy\" class=\"alignnone  wp-image-6035\" title=\"Starbucks Peppermint Mocha Cupcakes\" src=\"http:\/\/cookiescupcakesandcardio.co\/wp-content\/uploads\/2014\/12\/DSC_0176site.jpg\" alt=\"Starbucks Peppermint Mocha Cupcakes\" width=\"599\" height=\"399\" srcset=\"http:\/\/cookiescupcakesandcardio.co\/wp-content\/uploads\/2014\/12\/DSC_0176site.jpg 800w, http:\/\/cookiescupcakesandcardio.co\/wp-content\/uploads\/2014\/12\/DSC_0176site-300x199.jpg 300w\" sizes=\"(max-width: 599px) 100vw, 599px\" \/><\/a><\/p>\n<div>Other:<\/div>\n<\/div>\n<div>\n<ul>\n<li>Vanilla buttercream<\/li>\n<li>Red and green gel paste\u00a0<\/li>\n<li>Red and green peppermint candies<\/li>\n<\/ul>\n<\/div>\n<div>Procedure:<\/div>\n<ol>\n<li>Preheat oven to 350F.\u00a0 Line cupcake pan with cupcake liners.\u00a0<\/li>\n<li>In a small bowl, combine flour, baking soda, baking powder, espresso powder and salt. Whisk until combined.\u00a0<\/li>\n<li>In the bowl of a stand mixer fitted with the paddle attachment, cream butter and sugar together until light and fluffy.\u00a0<\/li>\n<li>With mixer on low speed add egg and extract.\u00a0 Mix until smooth. \u00a0<\/li>\n<li>Combine milk and coffee in a small container.\u00a0<\/li>\n<li>Add half of the flour mixture to the butter mixture, and mix on low.\u00a0 While the mixer is turning, slowly add half of the milk mixture.\u00a0 Repeat, incorporating all the milk and flour mixtures.\u00a0<\/li>\n<li>Fill each cupcake liner 2\/3 full with cupcake batter and bake for 20 minutes, or until a toothpick inserted into the center comes out clean.\u00a0 Allow to cool completely.\u00a0<\/li>\n<li>Place a 1M tip inside a piping bag.\u00a0 Using a food-only paintbrush, swipe one line of green gel paste from the top of the tip, up the inside of the bag.\u00a0 Repeat with the red gel paste opposite the green, again on the inside.\u00a0 Fill bag with white buttercream.\u00a0 Pipe a standard top to the cupcake and see the red and green swirl appear! \u00a0<\/li>\n<li>Top with a peppermint candy, or crushed candy cane pieces and serve when ready.\u00a0<\/li>\n<li>These are best eaten within 2-3 days.<\/li>\n<\/ol>\n<p><a href=\"http:\/\/cookiescupcakesandcardio.co\/wp-content\/uploads\/2014\/12\/DSC_0160site.jpg\"><img loading=\"lazy\"
