{"id":4461,"date":"2013-11-12T17:52:25","date_gmt":"2013-11-12T17:52:25","guid":{"rendered":"http:\/\/cookiescupcakesandcardio.com\/?p=4461"},"modified":"2013-12-24T04:27:34","modified_gmt":"2013-12-24T04:27:34","slug":"triple-chocolate-mousse-cake-recipe","status":"publish","type":"post","link":"http:\/\/cookiescupcakesandcardio.co\/?p=4461","title":{"rendered":"Triple Chocolate Mousse Cake Recipe"},"content":{"rendered":"<p>If you are a chocolate lover (like me) you are going to DIE for this recipe.\u00a0 When I took this cake to the staff room at school, one of my coworkers said it was the best cake she had ever had.\u00a0 I brought three of these cakes in, and they were gone in a day.\u00a0 That&#8217;s gotta be a record somehow!\u00a0 Each layer of the mousse has a unique flavour.\u00a0 The bottom is a light, flourless chocolate cake with a hint of espresso.\u00a0 The espresso brings out the richness of the chocolate, so make sure that you don&#8217;t leave it out.\u00a0 The middle is melt in your mouth delicious.<\/p>\n<p>This cake is time consuming, so make sure you have lots of time for each layer to set and\/or cool as needed.\u00a0 You want it to be completely set before you cut it, or you won&#8217;t have the layers set enough for them to stay standing up.\u00a0 It&#8217;s definitely worth the effort, so don&#8217;t let the time turn you off.<\/p>\n<p><iframe loading=\"lazy\" src=\"\/\/www.youtube.com\/embed\/BaDEtXa5QgU\" frameborder=\"0\" width=\"600\" height=\"338\"><\/iframe><\/p>\n<div>\n<div>\n<div><!--more--><\/div>\n<div><span style=\"font-size: medium;\"><strong>Triple Chocolate Mousse Cake\u00a0Recipe Ingredients:<\/strong><\/span><\/div>\n<div>\u00a0<\/div>\n<div><span style=\"text-decoration: underline;\">Bottom Layer<\/span><\/div>\n<ul>\n<li>7oz bittersweet chocolate (I used chips)<\/li>\n<li>3oz butter (6 tbsp)<\/li>\n<li>3\/4 teaspoon espresso powder<\/li>\n<li>pinch of salt<\/li>\n<li>4 eggs, separated<\/li>\n<li>1\/3 cup brown sugar (60g)<\/li>\n<\/ul>\n<\/div>\n<\/div>\n<div><span style=\"text-decoration: underline;\">Middle Layer<\/span><\/p>\n<ul>\n<li>2 tablespoons cocoa powder <\/li>\n<li>5 tablespoons hot water (75mL)<\/li>\n<li>7oz bittersweet chocolate (I used chips)<\/li>\n<li>1 1\/2 cups cold heavy cream (whipping cream) (350mL)<\/li>\n<li>1 tbsp granulated sugar (7g)<\/li>\n<li>1\/4 tsp salt<\/li>\n<\/ul>\n<\/div>\n<div><span style=\"text-decoration: underline;\">Top Layer<\/span><\/div>\n<ul>\n<li>3\/4 teaspoon unflavoured gelatin<\/li>\n<li>1 tablespoon water (15mL)<\/li>\n<li>6 oz white chocolate (I used chips)<\/li>\n<li>1 1\/2 cups cold heavy cream (whipping cream) (350mL)<\/li>\n<\/ul>\n<div>\u00a0<\/div>\n<div><a href=\"http:\/\/cookiescupcakesandcardio.co\/wp-content\/uploads\/2013\/11\/DSC_0162blog.jpg\"><img loading=\"lazy\" class=\"alignnone  wp-image-4468\" title=\"chocolate mousse cake\" src=\"http:\/\/cookiescupcakesandcardio.co\/wp-content\/uploads\/2013\/11\/DSC_0162blog.jpg\" alt=\"chocolate mousse cake\" width=\"600\" height=\"397\" srcset=\"http:\/\/cookiescupcakesandcardio.co\/wp-content\/uploads\/2013\/11\/DSC_0162blog.jpg 800w, http:\/\/cookiescupcakesandcardio.co\/wp-content\/uploads\/2013\/11\/DSC_0162blog-300x198.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/><\/a><\/div>\n<div>\u00a0<\/div>\n<div><span style=\"font-size: medium;\"><strong>Procedure:<\/strong><\/span><\/div>\n<div>\u00a0<\/div>\n<div><span style=\"text-decoration: underline;\">Bottom Layer<\/span><\/div>\n<div>Combine chocolate, espresso powder and butter in a heat proof bowl.\u00a0 Melt in the microwave for 60 second intervals on 50% power.\u00a0 Mix until combined and melted.\u00a0 Allow to cool for 5 minutes.\u00a0 Separate eggs into two different bowls.\u00a0 Into the yolks, add the vanilla and whisk until combined.\u00a0 Add yolk mixture to chocolate mixture and stir to combine.\u00a0 Into a stand mixer fitted with the whisk attachment, combine the egg whites and salt and whisk until frothy (about 30s).\u00a0 Add half of the brown sugar and whisk for about 30s.\u00a0 Add the remaining brown sugar and continue to whisk until soft peaks form.\u00a0 Take 1\/3 of the egg white mixture and add it to to the chocolate mixture.\u00a0 Whisk until combined.\u00a0 Add the remaining amount of egg white mixture and fold with a spatula until no white streaks remain.\u00a0 Place into greased 9&#8243;x 3&#8243; springform pan and bake at 325F for 30-40 minutes. Set aside to cool completely.<\/div>\n<div>\u00a0<\/div>\n<div><span style=\"text-decoration: underline;\">Middle layer\u00a0<\/span><\/div>\n<div>Mix the cocoa and water together and set aside.\u00a0\u00a0 Melt the chocolate in a heatproof bowl and stir until smooth.<\/div>\n<div>Whip the cream, sugar and salt together until soft peaks form.\u00a0 Mix the cocoa powder mixture into the melted chocolate until smooth.\u00a0 Add one third of the whipped cream into the chocolate and stir until lightened.\u00a0 Add the remaining amount of whipped cream and fold with a spatula until no white streaks remain.\u00a0 Spoon mixture onto the cooled bottom layer and place into refrigerator until set (about 30 minutes).<\/div>\n<div>\u00a0<\/div>\n<div><span style=\"text-decoration: underline;\">Top Layer<\/span><\/div>\n<div>Mix the gelatin and water in a small bowl and set aside for 5 minutes.\u00a0 Bring 1\/2 cup of cream to a boil and pour over top of white chocolate.\u00a0 Add gelatin and mix until chocolate is smooth.\u00a0 Whip cream in stand mixer until soft peaks have formed.\u00a0 Add one third of the whipped cream into the chocolate and stir until lightened.\u00a0 Add the remaining amount of whipped cream and fold with a spatula until no white streaks remain.\u00a0 Spoon mixture onto the cooled bottom layer and place into refrigerator until set (about 2-3 hours).\u00a0 Garnish as desired.\u00a0 Slice with a hot knife and serve immediately.<\/div>\n<div>\u00a0<\/div>\n<div><a
