mushrooms?\u00a0 I&#8217;m such a proud mother.\u00a0<\/div>\n<div>In case you didn&#8217;t figure it out, we staged the mushroom hunt, but I have to say that Ruby did a great job of pretending to search for those mushrooms.\u00a0 She&#8217;s so happy to go with anything we put her up to.\u00a0 As you can see in the video, she&#8217;s quite content to sit around when I&#8217;m explaining the mushroom details, and she was happy to run through the long grass &#8220;searching&#8221;.\u00a0 She&#8217;ll never leave the area where we are- some may call that being a big chicken, but I call it love and caution.\u00a0 There are bears in the wild where we live!! \u00a0<\/div>\n<div>\u00a0<\/div>\n<div>Making the meringue mushrooms turned out to be a time intensive project (they have to bake for almost 2 hours), but the end result is so realistic&#8230;and delicious.\u00a0 Meringue tastes lovely and melts in your mouth! \u00a0\u00a0<\/div>\n<div>\u00a0<\/div>\n<p><iframe loading=\"lazy\" \/><\/strong><\/span><\/div>\n<div>\u00a0<\/div>\n<div><span style=\"font-size: small;\"><strong> Ingredients:<\/strong><\/span><\/div>\n<p>4 egg whites<\/p>\n<\/div>\n<p>1 cup granulated sugar (200g)<\/p>\n<\/div>\n<p>Pinch of Cream of Tartar<\/p>\n<\/div>\n<p>1 tsp vanilla extract<\/p>\n<p><a 300w\" sizes=\"(max-width: 599px) 100vw, 599px\" \/><\/a><\/p>\n<p><span style=\"font-size: medium;\"><strong>Procedure<\/strong><\/span>:<\/p>\n<p><strong>Meringue<\/strong> <br \/>Combine egg whites, sugar, and tartar in bowl from stand mixture.\u00a0 Place over top of a simmering pot of water.\u00a0 Whisk constantly until mixture is smooth to touch and warm.\u00a0 Remove from heat and place bowl back into stand mixer fitted with whisk attachment and whisk on high speed for 10 minutes until meringue is white and fluffy and bowl is cool to touch.\u00a0<\/p>\n<\/div>\n<p><strong>Mushrooms<\/strong><br \/>Line tray with parchment paper.\u00a0 Fill piping bag fitted with small round tip with meringue and pipe small round mounds for tops of mushrooms.\u00a0 Pipe stems for the mushrooms by creating a small skinny base.\u00a0 Bake at 200F for 60 minutes.\u00a0 Then turn oven temperature down to 175F and continue to bake for 45-60 minutes more until meringues are dry but not yet coloured.\u00a0<\/p>\n<\/div>\n<p>Melt dark and white chocolates separately.\u00a0 Using an offset spatula, first cover bottom of mushroom tops with dark chocolate and allow to harden.\u00a0 Switching to white chocolate cover the dark chocolate.\u00a0 While white chocolate is still soft, use a toothpick to etch out the &#8220;gills&#8221; of the mushroom cap.\u00a0 Allow to dry.\u00a0 Using a sharp knife core out a small piece of the mushroom cap (underneath), dip a stem in to the white chocolate, and insert into the cored out area.\u00a0 Allow to dry.\u00a0<\/p>\n<\/div>\n<p><strong>Cupcake Assembly<\/strong><br \/>To decorate the cupcakes, cover the top of the cupcake with chocolate buttercream.\u00a0 Place cookie crumbs, chocolate shavings, and rocks as desired to create the &#8220;floor&#8221; of a forest.\u00a0 Place mushrooms into the buttercream.\u00a0 Pipe small amounts of grass around the mushroom and rock bases.\u00a0 Sprinkle the top of the mushrooms with cocoa powder to give a more realistic effect.<\/p>\n<p><a
