Pumpkin pie INSIDE a cinnamon cupcake. \u00a0O. M. G. \u00a0Soooo good! \u00a0Yes, it is a time intensive recipe. \u00a0You&#8217;re basically having to make two different recipes, and then combine them to make one. \u00a0It&#8217;s twice the work for half the product, but these are made for their &#8220;shock&#8221; value. \u00a0How awesome would it be to surprise your friends and family with what looks like a normal, everyday cupcake, and then, BAM, they bite into it, and PUMPKIN PIE!\u00a0<\/p>\n<p>What I like about this recipe is that you can make the pies ahead of time, and freeze them until you need them for the cupcakes. \u00a0Just make sure to keep them in a sealed container in the freezer and bring them out to thaw prior to using them. \u00a0<\/p>\n<p><iframe loading=\"lazy\" src=\"\/\/www.youtube.com\/embed\/VEl0bkYYYHY\" frameborder=\"0\" width=\"600\" height=\"450\"><\/iframe><\/p>\n<div>\n<div><!--more--><\/div>\n<div><strong>Snickerdoodle Cupcakes:<\/strong><\/div>\n<p>3 cups all-purpose flour (360g)<br \/>1 tbsp baking powder<br \/>1\/2 tsp salt<br \/>1 tbsp cinnamon<br \/>1 cup butter (240g)<br \/>1 3\/4 c granulated sugar (350g)<br \/>4 eggs<br \/>2 tsp vanilla extract<br \/>1 1\/4 cups milk (420g)<br \/><a href=\"http:\/\/cookiescupcakesandcardio.co\/?p=2696\">Vanilla buttercream<\/a><\/p>\n<\/div>\n<p><strong>Pumpkin Pie Filling<\/strong><\/p>\n<p>1\/2 cup brown sugar (90g)<br \/>3\/4 cup pumpkin puree (180mL)<br \/>1\/2 tsp cinnamon<br \/>1\/2 tsp ground ginger<br \/>pinch cloves<br \/>1\/4 tsp salt<br \/>2 tsp cornstarch<br \/>1 egg<br \/>3\/4 cup evaporated milk (180mL)<br \/>Pie pastry (store bought or from scratch, our recipe is <a href=\"http:\/\/cookiescupcakesandcardio.co\/?p=4282\" target=\"_blank\">here<\/a> with our Apple Pie)<br \/>small round cutter (2&#8243;-3&#8243;)<\/p>\n<div>\u00a0<\/div>\n<div><a href=\"http:\/\/cookiescupcakesandcardio.co\/wp-content\/uploads\/2013\/11\/DSC_9428blog.jpg\"><img loading=\"lazy\" class=\"alignnone  wp-image-4421\" title=\"Pumpkin Pie Cupcakes\" src=\"http:\/\/cookiescupcakesandcardio.co\/wp-content\/uploads\/2013\/11\/DSC_9428blog.jpg\" alt=\"Pumpkin Pie Cupcakes\" width=\"601\" height=\"400\" srcset=\"http:\/\/cookiescupcakesandcardio.co\/wp-content\/uploads\/2013\/11\/DSC_9428blog.jpg 800w, http:\/\/cookiescupcakesandcardio.co\/wp-content\/uploads\/2013\/11\/DSC_9428blog-300x199.jpg 300w\" sizes=\"(max-width: 601px) 100vw, 601px\" \/><\/a><\/div>\n<p><strong>Mini pumpkin pies:<\/strong><\/p>\n<p><strong><\/strong>Mix all ingredients for filling and set aside.<\/p>\n<div>Roll out pastry dough on a floured surface and cut into small rounds.\u00a0 Place each small round into a mini cupcake pan and press into the well.\u00a0 Fill with pumpkin filling.\u00a0 Bake at 375F for 10-12 minutes or until crust is golden brown.\u00a0 Allow to cool.<\/div>\n<div>\u00a0<\/div>\n<div><strong>Cupcakes:<\/strong><\/div>\n<div>In a medium bowl, combine flour, baking powder, salt and cinnamon.\u00a0 Mix and set aside.\u00a0 In a stand mixer fitted with paddle attachment, cream butter and sugar until light and fluff.\u00a0 Add eggs one at a time and mix until combined.\u00a0 Add vanilla.\u00a0<\/div>\n<p>Add 1\/3 of the flour mixture and mix, and half of the milk to the butter mixture in the bowl and mix.\u00a0 Continue to alternate flour and milk until all is added into batter.<\/p>\n<p><strong>Assembly:<\/strong><\/p>\n<p>Line cupcake wells with wrappers and place a small amount (1tbsp) of batter on the bottom of each liner.\u00a0 Place mini pie in the centre of the batter.\u00a0 Cover pie with 2-3 tbsp of batter.\u00a0 Bake at 350F for 22-25 minutes.\u00a0 Allow to cool and finish by topping with buttercream.<\/p>\n<p>Enjoy your hard work and put your feet up!
