{"id":4282,"date":"2013-10-01T22:06:42","date_gmt":"2013-10-01T22:06:42","guid":{"rendered":"http:\/\/cookiescupcakesandcardio.com\/?p=4282"},"modified":"2013-10-20T16:48:06","modified_gmt":"2013-10-20T16:48:06","slug":"apple-pie-recipe-how-to-make-apple-pie","status":"publish","type":"post","link":"http:\/\/cookiescupcakesandcardio.co\/?p=4282","title":{"rendered":"Apple Pie Recipe: How to Make Apple Pie"},"content":{"rendered":"<p>Making apple pie has never been on my baking bucket list, but it is definitely something that I knew I should try once!\u00a0 Which I guess means it should be on a bucket list.\u00a0 My mistake.\u00a0 Ok, so now that the apple pie has moved from &#8220;maybe make&#8221; to &#8220;must make&#8221;, I decided that I should give it a try.<\/p>\n<p>The most important things to keep in mind when making apple pie is 1. the crust, and 2. the apples.\u00a0 You need a good crust recipe and you need A LOT of apples.\u00a0 More than you think you will.\u00a0 And then more than that.\u00a0 We went to my mother in law&#8217;s to pick apples, and I brought along a little basket to collect them in.\u00a0 She laughed at me and brought me out a HUGE planting pot!\u00a0 Like a pot for an indoor tree!!\u00a0 I laughed at her, and thought that she was the one &#8220;out to lunch&#8221;.\u00a0 Needless to say, I should have listened to her and her 60+ years of baking apple pie experience.\u00a0 That and the fact that she&#8217;s Italian.\u00a0 She knows what&#8217;s she&#8217;s doing in the kitchen.\u00a0<\/p>\n<p><iframe loading=\"lazy\" src=\"\/\/www.youtube.com\/embed\/7nvcDerAn_I\" frameborder=\"0\" width=\"600\" height=\"450\"><\/iframe><\/p>\n<p><!--more--><\/p>\n<p><span style=\"font-size: medium;\"><strong>Ingredients<\/strong><\/span>:<\/p>\n<p><span style=\"text-decoration: underline;\">Apple Pie Pastry<\/span><\/p>\n<p>2 1\/2 cups all purpose flour (300g)<br \/>1 teaspoon salt (5mL) <br \/>1 teaspoon sugar (5mL) <br \/>1 cup of cold butter (240g)<br \/>1\/4-1\/2 cup cold water (60mL-120mL) <\/p>\n<p><span style=\"text-decoration: underline;\">Apple Pie Filling<\/span><br \/>3 lbs apples, sliced, cored and peeled<br \/>2 tablespoons lemon juice\u00a0 (30mL) <br \/>1 teaspoon cinnamon (5mL) <br \/>1\/4 teaspoon ground nutmeg<br \/>1\/8 teaspoon salt<br \/>1\/4 cup granulated sugar (50g) <\/p>\n<p><span style=\"text-decoration: underline;\">Egg Wash<\/span><br \/>1 egg yolk<br \/>1 tablespoon heavy cream (15mL)<\/p>\n<p>Coarse sanding sugar for decoration<\/p>\n<p><strong>Procedure:<\/strong><\/p>\n<p>To make the pastry, combine and mix the flour, sugar and salt in a food processor.\u00a0\u00a0 Add the butter and use the &#8220;pulse&#8221; button to combine.\u00a0 You will be looking for a coarse texture, with small pieces of butter.\u00a0 Add the cold water and continue to pulse until the dough combines. If it is dry, add more water a tablespoon at a time.\u00a0 Divide the dough in half and wrap in plastic wrap.\u00a0 Cool in fridge for 1 hour, or overnight.<\/p>\n<p>When dough is chilled, roll out on a floured surface until 1\/4&#8243;-1\/8&#8243; thick.\u00a0 Place into pie pan.\u00a0 Set into fridge if desired.<\/p>\n<p>To make the filling, combine the apples, cinnamon, salt, sugar, nutmeg and lemon juice and mix to coat apples.\u00a0 Fill pie shell, piling up in the middle.\u00a0 Place in fridge again to keep cool. \u00a0<\/p>\n<p>Roll out second disc of dough to the same thickness and place over top of apples.\u00a0 Be sure to vent the crust by pricking it with a fork or knife.\u00a0 Mix together the egg wash and brush onto the pastry.\u00a0 Sprinkle with sanding sugar if desired.<\/p>\n<p>Bake in preheated oven at 425F for 25 minutes.\u00a0 Lower temperature to 375F and continue to bake for 60-70 more minutes.<\/p>\n<p>Allow to cool for 2-3 hours before slicing.<\/p>\n<p><span style=\"font-size: medium;\"><strong>Things to note:\u00a0<\/strong><\/span><\/p>\n<p>When making the crust, you can use butter\/margarine\/Crisco interchangeably.\u00a0 Whichever you prefer to work with.\u00a0 Butter makes for a more flakier dough (therefore has more potential for cracking while rolling), while Crisco makes for a smoother dough for rolling.\u00a0 I haven&#8217;t tried margarine, but would love to know if you have.
