to Make Cheesecake Cupcakes"},"content":{"rendered":"<p>If you&#8217;ve been keeping up with my recent blog posts, you will know that my last post was about the <a href=\"http:\/\/cookiescupcakesandcardio.co\/?p=3875\" target=\"_blank\">best cheesecake recipe <\/a>I could possibly share with you. \u00a0I have this on account of my hairdresser.\u00a0<\/p>\n<p>Now, the thing with a full sized cheesecake is that it is so large (not that that is a bad thing for certain occasions or parties) but sometimes, a small cupcake sized serving is just perfect to take the edge of a gnawing sweet tooth. \u00a0My sweet tooth never, ever stops gnawing at me, but having one of these small portions sure helps to silence it for a while! \u00a0\u00a0<\/p>\n<p>Unfortunately, when you are me and faced with a couple dozen mini cheesecakes, self control must be put into practice! \u00a0That damn sweet tooth and complete lack of self control make a nightmare for person with a freezer full of mini cheesecakes. \u00a0It&#8217;s a good thing I have a staff room at school to &#8220;generously donate&#8221; my creations to!<\/p>\n<p><iframe loading=\"lazy\" src=\"http:\/\/www.youtube.com\/embed\/oivNC08ZQVU\" frameborder=\"0\" width=\"600\" height=\"338\"><\/iframe><\/p>\n<p><!--more--><\/p>\n<p><span style=\"font-size: medium;\"><strong>How to Make Cheesecake Cupcakes<\/strong><\/span><\/p>\n<p>Ingredients (same as my cheesecake recipe)\u00a0<\/p>\n<p>Crust<br \/>1 1\/2 cups graham cracker crumbs (180g)\u00a0<br \/>1\/2 cup granulated sugar (50g)<br \/>1\/4 cup melted butter (60g)<\/p>\n<p>Filling<br \/>16 oz cream cheese (450g)<br \/>2\/3 cup granulated sugar (70g)<br \/>2 eggs<br \/>1 tsp vanilla extract<\/p>\n<p>Topping<br \/>1 cup sour cream (240mL)<br \/>2 tbsp granulated sugar (25g)<br \/>1 tsp vanilla extract \u00a0<\/p>\n<p>Preheat the oven to 375F (190C).\u00a0 Mix together crust ingredients, and press into cupcake liners.\u00a0 Set aside.\u00a0<\/p>\n<p>Mix the filling ingredients together either using a stand mixer or handheld one.\u00a0 Pour onto the graham cracker crumb and spread around to cover each of the crusts in the cupcake liners.\u00a0 Bake in the preheated oven for 25 minutes.<\/p>\n<p>Once the cheesecakes have been baked for 25 minutes, remove from oven and allow to return to room temperature.\u00a0 When the cheesecakes have cooled, turn oven temperature up to 425F (220C) and mix topping ingredients together.\u00a0 Pour sour cream topping onto the cheesecake layers, and return to oven for 10 minutes.<\/p>\n<p>When finished baking, remove from oven and allow to cool again.\u00a0 Serve with fresh, canned or frozen berries.\u00a0<\/p>\n<p><a href=\"http:\/\/cookiescupcakesandcardio.co\/wp-content\/uploads\/2013\/04\/DSC_5410web.jpg\"><img loading=\"lazy\" class=\"alignnone size-full wp-image-3880\" title=\"cheese cake cupcakes \" src=\"http:\/\/cookiescupcakesandcardio.co\/wp-content\/uploads\/2013\/04\/DSC_5410web.jpg\" alt=\"cheese cake cupcakes \" width=\"600\" height=\"400\" srcset=\"http:\/\/cookiescupcakesandcardio.co\/wp-content\/uploads\/2013\/04\/DSC_5410web.jpg 600w, http:\/\/cookiescupcakesandcardio.co\/wp-content\/uploads\/2013\/04\/DSC_5410web-300x200.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/><\/a><\/p>\n<p>I absolutely love this recipe. \u00a0It is super rich, and creamy. \u00a0I simply cannot get enough of it (hence the self control problem). \u00a0I found that adding the fresh berries to the top added just the perfect amount of tartness to compliment the richness of the cake. \u00a0I&#8217;m not normally a big cherry pie filling fan, but the version that I used was a low sugar one, and it seemed to have just the perfect amount of tartness to it. \u00a0I may have to explore more into cherry pie fillings after this new discovery. \u00a0<\/p>\n<p><a href=\"http:\/\/cookiescupcakesandcardio.co\/wp-content\/uploads\/2013\/04\/DSC_5410web2.jpg\"><img loading=\"lazy\" class=\"alignnone size-full wp-image-3881\" title=\"cheesecake 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/><\/a><\/p>\n<p>I hope you try and love this recipe as much as I do. \u00a0Man, oh man. \u00a0You will die. \u00a0<\/p>\n<p>Save one for me.
