So good it&#8217;s almost a cupcake."},"content":{"rendered":"<p>This weekend I ventured into <strong>bread<\/strong> . . . and of course <strong>cake<\/strong> baking . . . \u00a0I think I&#8217;m sticking to <strong>cupcakes<\/strong> though. \u00a0I was just searching some of the cake decorating sites and almost ALL of them use <strong>fondant<\/strong>. \u00a0I hate fondant. I hate the way it tastes, but love the way it looks. \u00a0I&#8217;m going to have to seriously improve in order to expand into decorating cakes. \u00a0Until then,<strong> I&#8217;m sticking to cupcakes and cookies. <\/strong>Friends who want to order, beware!<\/p>\n<p><a href=\"http:\/\/cookiescupcakesandcardio.co\/wp-content\/uploads\/2010\/11\/IMGP2600.jpg\"><img loading=\"lazy\" class=\"alignnone size-medium wp-image-315\" title=\"Oat Bread\" src=\"http:\/\/cookiescupcakesandcardio.co\/wp-content\/uploads\/2010\/11\/IMGP2600-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"http:\/\/cookiescupcakesandcardio.co\/wp-content\/uploads\/2010\/11\/IMGP2600-300x225.jpg 300w, http:\/\/cookiescupcakesandcardio.co\/wp-content\/uploads\/2010\/11\/IMGP2600.jpg 640w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>This is a <strong>delicious<\/strong>, <strong>healthy<\/strong> bread. \u00a0It is very <strong>hearty<\/strong> and <strong>filling<\/strong>. \u00a0It is also thick, so keep that in mind when you&#8217;re slicing the delicious goodness. \u00a0I slathered mine with <strong>peanut butter and jam<\/strong> . . . my fave!<\/p>\n<p><span style=\"color: #d87093;\">Whole Wheat Oatmeal Quick Bread<\/span><\/p>\n<p>(recipe adapted from &#8230;www.healthyfoodforliving.com)<\/p>\n<ul>\n<li>cooking spray<\/li>\n<li>1 cup + 1 Tbsp whole wheat pastry flour, divided<\/li>\n<li>1 1\/3 cup whole wheat flour<\/li>\n<li>2 1\/4 tsp baking powder<\/li>\n<li>1\/4 tsp baking soda<\/li>\n<li>1 1\/4 tsp salt<\/li>\n<li>1 cup + 1 Tbsp old-fashioned rolled oats, divided<\/li>\n<li>8 ounces plain 2% Greek yogurt<\/li>\n<li>1 large egg, lightly beaten<\/li>\n<li>1\/4 cup canola oil<\/li>\n<li>2 Tbsp Sucanat or brown sugar<\/li>\n<li>3\/4 cup low-fat buttermilk<\/li>\n<\/ul>\n<p>Directions:<\/p>\n<ol>\n<li>Preheat oven to 375 degrees F.<\/li>\n<li>Coat a 9 x 5 inch loaf pan with cooking spray. Sprinkle pan evenly with 1 Tbsp whole wheat pastry flour.<\/li>\n<li>In a large bowl, whisk together the remaining flour through 1 cup oats.<\/li>\n<li>In a medium bowl, whisk together yogurt through buttermilk.<\/li>\n<li>Add yogurt mixture into the flour mixture and gently stir just until combined.<\/li>\n<li>Pour batter into prepared pan, spreading the top with a spoon or rubber spatula. Sprinkle with remaining 1 Tbsp oats.<\/li>\n<li>Bake in the center of the oven for 40-45 minutes, or until the bread is golden brown and a toothpick inserted into the center of the loaf comes out clean.<\/li>\n<li>Allow bread to sit in pan for about 15 minutes. Gently run a butter knife around the edges of the loaf and remove from pan.<\/li>\n<li>Let cool completely on a wire rack before slicing.
